i can't use that or make a map cause when i put a polygon only player collide  my character walk on it euhhh !?! what can i do ?

ofc players can walk on it... it's "only player collides". if you wan't polys that collide with only bullets, use "only bullets collide". if you just want a poly without collision, use "doesn't collide".

I guess you should read some of the tutorials in this mapping section. There are some basic polyworks tutorials that will help you very much getting it started ;)

When i put a normal polygone and i save the map on the map folder in the soldat folder and i go test the game my chatacter fall on all poly gone and die ! wath can i do ? ???  ???  ???  :'(

you need to compile the map. otherwise you will fall through all polys.

Where'd those radical once-stickied tutorials go? The only one that's prevalent is Cyst's super waypointing guide.

There are so many tutorials in there you'll probably intimidate yourself with not being able to choose from the masses. So the ones I recommend/have experience with would be... oh, and obviously some of these tutorials assume you know how to access the basics, so be prepared and mess around to find things:

Wraithlike's Guide to Beginning Mapping
Wraithlike's Grande Mapping Tutorial

If you want something hardcore, read through the Grande tut. The rest of the tutorials are rather superfluous and focus on the varying specifics of mapping which you don't need now as you are apparently a beginner. Everyone was once.
