Elfen Lied is the first anime i've ever seen and it acted as an encouragement to watch some others.
It is in the top3 best animes I've watched next to Death Note and Claymore (DN and Claymore published by the same company...)
so yah, Elfen Lied is great.

*and btw the topic title is FALSE, its not Elfin Lied* (Its in German. Lied = song. Elfen = Elven)*
However its not worth going to a god damn 100 paged fan forum- wtf? The anime did have a strong impact, but it doesn't make you'll turn into a freaking idiot and go to forums because of it...

Don't know about manga, but I know of some animes that are worth watching either by their originality, plot or emotional part.
Those would probably be Death Note- an original anime, because instead of some all- blood non-stop action you get a thrilling storyline where a man discovers a notebook that can kill at a distance if the future corpses name is written in it and his face pictured at the same time. That is not what the most entertaining part is, the fact that the protagonist is fairly clever and intelligent, he plots a way to evade the police and then concentrates on a tug-of-war between the protagonist and a disguised detective L. The battles are not physical, but mental. Hell, they even see eachother face to face, but since they don't know eachother- neither of them can kill/ convict the other. Anyway, watch it yourselves on veoh.com
* From the creators of Death Note comes a completely different anime called Claymore- it speaks about the life of a Demon killer who happens to be a Claymore herself. All of the Claymores are women, well at least that is what is left of them since the men morphed into demon- claymores- arch enemies of the ladies. The lady Claymores have 50% of demons' blood in them so they can "kind of" get super strength and whatnot and most importantly- they carry huge ass swords with which they kill the gut- eating demons that can shapeshift into people during daytime. The action takes place in the Middle Ages or something.
Both in Claymore and Death Note the graphics are absolutely astonishing. Take your average anime, bollocks on it and throw it away and imagine a six times better looking one- that is what its all about. (It is not as good as mushishi though)
* Then of course comes Elfen Lied that needs no introduction. Only 13 episodes, but it will definitely make you crave for more. Unfortunately that will never happen. That anime will haunt you and make you have weird dreams for over half a year guaranteed. Explicit violence, gore, guts, dismemberment, blood splatters, new race with horns, drama, love story, cases of amnesia, lots of death and sorrow and a great plot and deep characters.
*Higurashi no naku koro ni Kai. (When the cicada's cry or smth.) The beginning starts with a boy smashing two girls' heads with a wooden baseball bat while they are lying on the floor. Yep, it is somewhat a horror- mistery flick that I would personally recommend. The first season is astonishing. It will make your jaw fall somewhere into the area of your knees and make it hang there for a whole while. Needles in riceballs, baseball bats, cleavers, axes and knives, corpses, carnage, hatred, betrayal, fear, emotions, Watanagashi festival that takes a life or two each year it happens, police investigation, a group of children destined to die from the hands of each other, each few episodes the protagonist changes and the ways of obliteration as well. Torture, clawing your own neck with fingernails, ripping off fingernails with a tool, crucification and stabbing while hanging on a cross, throwing a handicapped person into the depths of a cave, leaving to rot in a dark cell, deadly virus that makes people go berserk, doomsday of the village when everyone dies on one certain day at the same time by something, reincarnation, remembering the previous life and deeds of what happened in the past, severing limbs with a saw by a girl, putting the limbs in a trashed refrigerator etc...
* I'll shove more here when I remember. Instead of reading my semi-crap reviews you can just flucking google this lol... damn.
